Omurice (Japanese Omelette Rice) & Winners

Time flies, it’s already a month. The last two weeks I was in the States, one week in NJ and one week in NYC. Unfortunately I could hardly spend any time in Manhattan except a Friday night dinner @Rosa Mexicana.

I was very glad that I managed to fly with Marc along with my husband’s ‘long’ business trip. It was because we almost had to cancel the trip because Marc got a fever for the very first time since born just two nights before our departure. Luckily the fever did not last long.

I hereby sincerely to apologize to all those readers who made the time to leave a comment in my previous Sesame Chicken post. I am sorry that I did not have time to respond to all of them due to the travel as my time was fully occupied and hardly had quality time to sit down and write. The mornings were used to prepare his solids, play with him, take a bath, you name it. And in the afternoon, of course being in the US, I have to make use of every opportunity to do some shopping, my main purpose is to do baby shopping and here is really heavenly. In NJ, I shopped mainly in Short Hills Mall, and in NYC, I am lucky to stay with my old schoolmate and she drove me here and there to look for the goodies.

Sorry to write so much about my motherhood, not mean to bore you, but this is pretty much my life right now. I wonder if I have to switch this to a mom’s blog. Anyway, I cannot say how much fun I have shopping for baby Marc. It’s like a new horizon for me to explore. Believe it or not, Baby Marc is much easier to handle when he is being out then when staying at home. The other night, he has given a hard time to me, it’s so difficult to read his mind lately, he could only fall asleep at 10:30pm which after I have finished all the chores, I can only start writing at 11:30pm. (However, I cannot finish this post before flying back.)

Just the day after I have posted my previous post, on March 11, I received a call from my dad in the middle of the night telling me the Tsunami & Earthquake catastrophe happened in Japan. And I have changed to donate the money to Red Cross instead of to Oxfam. It’s so easy that you can use paypal to donate. So who are the lucky winners? You will see at the end of this post.

And before our departure to the US, I had made use of the leftover of the fridge and come up with made a Japanese Omelette Rice aka Omurice, I have tried to make different fried rice but never get round to try this because seems to take more time to make but the results told me that it can be as quick.

Serves 1

Ingredients:

  • 1 cup leftover rice
  • small piece chicken fillet, cut into small pieces, marinate with some oil, soy sauce, mirin and white pepper
  • 2 stalk spring onion, cut into small pieces
  • red onion, cut into small cubes
  • garlic
  • salt & pepper
  • 3 eggs
  • ketchup
  • cooking oil

Directions:

  1. Heat some oil in the pan and stir fry the red onion, followed by the chicken. When they are almost cooked, stir in the leftover rice, keep on stirring until the rice are not in lumps and completely falls apart. Season with a little salt and pepper. Beat in an egg and keep stir frying.
  2. When all cooked, stir in the spring onion. Season with some ketchup and mix well. Turn the heat down and set aside.
  3. Using a second pan if possible or transfer the fried rice to a plate and keep warm. Beat 2 eggs in a bowl, season with a little salt. Heat up some oil, pour in the beaten eggs and fry into a round omelet, just when it’s about 70% cooked, place the fried rice into the middle of the omelet and fold the egg into half just like when you make a normal omelet. Press gently to seal the openings.
  4. Place a plate on the pan and carefully flip the omurice on the plate.
  5. Add more ketchup on top of the omurice if desired and serve immediately.
