Blushing Piña Colada

Sitting in front of the TV watching World Cup, I suddenly felt like making a summer drink which contained pineapple but a normal virgin pina colada does not interest me. I have always find that it is difficult to have a perfect pina colada, it was either too coconutty or the consistency was too thin and not creamy enough or it contained too much alcohol.

I found this recipe in my cocktail book at home: THE COMPLETE COCKTAIL MAKER by Stuart Walton and thought this would be a nice twist from the conventional colada, so I have adapted the recipe accordingly. And to our surprise, the outcome was extraordinary good, this pink colada was very well balanced, the banana played an important role that it made this mocktail very smooth, you can consider this to be a mocktail or a smoothie. You can indeed add some rum to it but given to my current status I have to wait a few more months to try it with rum.

Makes about 3 tall glasses

  • 220g, 1 small can of  Del Monte pineapple with pineapple juice  
  • 1 fresh medium sized banana
  • 165m, 1 small can coconut milk
  • 1/3 cup low fat cream
  • 1 cup fresh semi-skimmed milk
  • 2 scoops Movenpick strawberry ice creams 
  • 3 tbsp grenadine syrup
  • 5 ice-cubes
  • 3 tbsp rum (optional)

Directions:

  • Cut the banana in pieces
  • Put all ingredients into a blender and process until smooth.
  • Pour to tall glasses.

Enjoy this refreshing drink!!!
